Basil, the ‘royal plant’ is native to tropical regions but it is used in cuisine from around the world. There are an estimated 50 to 150 species of basil. Basil leaves are used fresh or dried to flavour meats, fish, salads, and sauces. Basil can even be used to make tea or to flavour oils and liqueurs. Due to varying types and quantities of essential oils, varietals may incorporate flavours ranging from cinnamon to lemon to anise. In addition to antioxidant vitamins and phenolics, Basil is a rich source of vitamin K, zinc, calcium, magnesium, potassium and dietary fibre.
